Tips

Achari paneer tikka

Reciepe 1
  • 1 cup curd - hang in a muslin cloth for 1 hour
  • 2 tsp ginger-garlic paste
  • 1 tbsp aam ke achaar ka masala
  • 2 tbsp gramflour (besan), 2 tbsp oil, preferably mustard oil
  • 3 tbsp thick cream
  • a pinch of turmeric powder
  • 1 tbsp tadoori masala
  • ½ tsp garam masala, ½ tsp red chilli powder
  • 1 tsp salt or to taste

Makes : 12 pieces

  • 400 gms paneer - cut into 1½” rectangles of ¾” thickness
  • 1 onion - cut into 8 pieces and separated
  • 1 small capsicum - cut into 1’ pieces

Chicken drumsticks with mustard honey dip

Reciepe 1
  • 2 eggs
  • 4 tbsp cornflour
  • 4-5 tbsp water
  • 2 pinches salt, 2 pinches red chilli powder
  • 1 cup dry bread crumbs mixed with 1 tbsp olive oil

Marinade

  • 4 tbsp olive oil oil or melted butter

Reciepe 1
  • 8 medium size potatoes - boiled

Stuffing

  • ½ cup grated paneer, ½ cup grated pizza cheese

Marinade

Reciepe 1

Rice

  • 1½ cups basmati rice
  • 4-5 chhoti illaichi (green cardamom),
  • 2 tej patta (bay leaves), 5-6 laung (cloves)
  • 4 tsp salt, 1 tbsp lemon juice, 10 cups water

Vegetables

  • 2 thin carrots - cut into cubes, 20 french beans - cut into 1" pieces
  • ½ of a small cauliflower - cut into very small florets (1 cup)
