Cream of chicken soup

Reciepe 1
  • 200-250 gm chicken with bones(2 pieces)
  • 1 carrot- sliced
  • 1 small onion - cut into 4 pieces and separated
  • 1 bay leaf, 2-3 cloves (laung), 3-4 pepper corns
  • a thin slice of ginger, optional
  • 4 cups water

Other ingredients

  • 1 tbsp butter
  • 2 tbsp flour (maida)

Tomato soup

Reciepe 1
  • 1 kg (12 medium) red tomatoes
  • 1 carrot - chopped, 1 onion - chopped, 1 potato - chopped
  • 4-5 laung (cloves), 4-5 saboot kali mirch (pepper corns)
  • 1” stick of dalchini (cinnamon)
  • 2 tbsp butter
  • 2 tsp salt, ¼ tsp crushed pepper

  • 3 cups chopped spinach (palak)

Fish patrani

Reciepe 1
  • 800 gms fish fillet - cut into 3” pieces

For coconut chutney

  • 1 cup grated fresh coconut, ½ cup chopped coriander
  • 6 green chillies - deseeded
  • 5-6 flakes garlic, 1 tsp chilli powder, 1 tbsp coriander seeds

Meat balls

Reciepe 1
  • 400 gm mutton mince
  • 1 slice bread - soak in water/milk
  • 1 egg
  • 1 tbsp butter
  • 1 onion - finely chopped
  • 2 tbsp chopped coriander
  • 1 tsp salt, ½ tsp red chilli powder
  • 1 tsp lemon juice
  • 1 tsp HP sauce

Other ingredients

  • A few thin slices of ginger and bay leaf
  • 2 tbsp oil
  • 1 small onion - chopped, 1 tsp chopped garlic
  • 1 tbsp HP sauce
  • 1 cup stock mixed with 1 tbsp cornflour.

Corn & paneer chaat

Reciepe 1
  • 2 whole corns - each cut into 2 pieces, see note
  • 1 tbsp softened butter
  • 1 onion - chopped
  • 1 tomato - chopped
  • 1 tbsp finely chopped coriander
  • 1-2 green chillies - chooped
  • 50 gms paneer - cut into tiny cubes
  • ½ tsp black salt
  • ½ tsp chaat masala
  • ½ tsp black pepper
  • Salt to taste
  • 1 tsp lemon juice, or to taste

Rogan josh

Reciepe 1

Marinate for 1 hour

  • 1 kg mutton - cut into 2” pieces
  • 250 gm (1¼ cups) yogurt - whisked till smooth

Brown onion paste

  • 6 onions (½ kg) - sliced, deep fried till golden, spread on a tray, and then ground to a paste with 1 tbsp dahi

Other ingredients

  • ½ cup ghee/oil
  • 3 laung (cloves), 2-3 chhoti illaichi (green cardamoms) - pounded
  • 1½” ginger, 10-15 large flakes garlic, 2 dry red chillies - soaked in 1 cup warm water
  • ½ tsp garam masala, 1½ tsp red chilli powder, 2 tsp dhania powder, 1½ tsp salt, or to taste
  • a tej patta, a little kesar (saffron) - dissolved in warm water

Reciepe 1

Marinate together

  • 1 chicken - cut into 12 pieces
  • 1 tbsp ginger-garlic paste
  • 2 cups dahi
  • 1 tsp salt pepper

  • 2 onions - grind to a paste
  • 1 green chilli - chopped
  • ¾ tsp garam masala

Dal makhani

Reciepe 1
  • 1 cup urad saboot (whole black beans)
  • 5 cups of water
  • 2 tbsp desi ghee, 1½ tsp salt,
  • 1 cup ready made tomato puree
  • ¼ tsp jaiphal powder, ½ tsp garam masala
  • 1½ tbsp kasoori methi (dry fenugreek leaves)
  • 1 tsp tomato ketchup
  • 1 tsp tandoori masala (optional)
  • 2-3 tbsp butter, preferably white

Grind to a paste

  • 2 dry, whole red chillies - deseeded & soaked for 10 minutes and then drained

  • 1 chicken (700-800 gm) - cut into 12 pieces

  • 4 tbsp channa dal (split Bengal gram)
  • 2 whole dry kashmiri red chillies - broken into pieces
  • ¼ tsp asafoetida (hing)

Reciepe 1
  • 300 gm fish - cut into 1½”flat pieces

  • 1 tbsp chopped coriander

Mustard paste (grind)

  • 4 tsp yellow mustard (peeli sarson)
  • 2 dry, red chillies - dessed
  • 1 onion -chopped finely
  • ¼ tsp salt, 2-3 tbsp water to grind
  • ½” piece ginger, 3-4 flakes garlic - chopped

Avial

Reciepe 1
  • 1 raw banana - cut into 1” long strips
  • 1 small carrot - cut into 1” long strips
  • 4 beans - cut into 1” pieces
  • 2 small drumsticks - cut into 1” pieces
  • 1 small potato - cut into 1” long strips or 100 gms yam -cut into 1” long strips
  • 1¼ tsp salt, ¼ tsp turmeric (haldi) powder
  • 2 tbsp coconut oil, few curry leaves
  • ½ tsp mustard seeds, 2 dry red chillies

Paste

  • ½ cup chopped coconut (fresh)

  • 1 cup red gram dal (tuvar/arhar dal)
  • 2 tbsp sambar powder, ½ tsp turmeric powder, ½ red chilli powder

  • 1 tej patta (bay leaf)
  • 1 tsp red chilli powder, 2 ¾ tsp salt

Whole spices - crushed together coarsely & add to the mutton

  • 1 large onion - grated, 1 tsp finely chopped ginger
  • 1 tbsp finely chopped garlic
  • ¾ tsp garam masala, ½ tsp red chilli powder

  • 100 gms paneer (cottage cheese) - cut into ½” cubes

Pav bhaji

  • 3 potatoes (250 gm) - cut into 8 pieces
  • 1 small flower of cauliflower - chopped roughly
  • 1 capsicum - chopped
  • 1 cup shelled peas
  • 1 tsp salt
  • 4 tbsp oil
  • 2 onions - finely chopped

  • 1½ cup kabuli channa - soaked overnight

  • 2 medium onion - chopped

Rajmah

Reciepe 1
  • 1½ cups red kidney beans (rajmah) - soaked overnight
  • 1 tbsp split gram (channe ki dal) - soaked overnight
  • 2½ tsp salt or to taste
  • 2 onions, 6-8 flakes garlic, 1” piece ginger
  • 6 tbsp oil
  • 1 bay leaf (tej patta), 2 cloves (laung), 1 black cardamom (moti elaichi)
  • 3 tomatoes - pureed in a blender
  • ½ cup yogurt - beaten well
  • ¼ tsp turmeric (haldi) powder, 3 tsp coriander (dhania) powder, ¼ tsp dry mango powder
  • ½ tsp garam masala, 1 tsp chilli powder, or to taste

Dimsums / Momos

Reciepe 1
  • 2 cups plain flour (maida),

Filling

  • 50 gm small mushrooms

  • 1 stick chopped lemon grass (use only the lower portion), knot the upper grassy portion
  • ½ tsp salt, ¼ tsp haldi
  • ¼-½ tsp peppercorns (saboot kali mirch), 1 tbsp lemon juice

Chicken in hot garlic sauce

Reciepe 1
  • 200 gm boneless chicken - cut into ¾” cubes
  • ½ tsp salt, ¼ tsp pepper, 1 tbsp garlic - grated
  • 1 tsp vinegar sauce
  • 2 tbsp oil, 2 tbsp very finely chopped garlic
  • 2 spring onions (only white part) - cut into thick diagonals
  • ½ onion - cut into triangles, ½ capsicum - cut into triangles
  • 1½ cups chicken stock
  • 1 tsp salt, ¼ tsp ajinomoto, ½ tsp sugar, 1 tbsp red chilli paste

  • ½ kg raw green mangoes - peeled, 6 cups water, 1 cup powdered sugar
